Dove Pork |
We were in Cruz Bay St John USVI getting provisions yesterday. Tom suggested we eat lunch prior to grocery shopping. Good idea. I have seen the grocery bill when I got to the store hungry, it's not a pretty sight! We found a small place no bigger than a broom closet - take away only. The sign said West Indies Food. There were several locals coming and going -
always a strong indication of good local food. The cook was a happy, local lady that was very engaging as she told us all about the specials of the day. Tom chose the Dove Pork - pork bits sauteed in a spicy tomato based sauce.

Conch in butter sauce |
I went with the Conch in butter sauce - super tender chunks of conch in a garlic butter sauce. Both were very good. The sides were plentiful - 1.) scoop of coleslaw 2.) scoop of potato salad - good 3.) scoop of spicy smashed sweet potatoes - awesome 4.) BIG spoonful of rice and pigeon peas 5.) two sweet fritters. Needless to say we were full as ticks when we lumbered into the grocery store after lunch.
After reading all about the preparation of conch, I am thinking that conch in general is a dish best enjoyed when fixed by others!
