Basic Bread Recipe

It took me several tries to get Deb's basic bread recipe to work for me.  All my fault as this is actually a fairly easy recipe.  First I was using the wrong flour.  I goofed and used self-rising flour instead of all purpose.  My various flours were in containers that weren't labeled.  Dough!  Get it?  D-oh!
Then I discovered my yeast was old.  New bottle was purchased.

Finally, I have always had difficulty in getting dough to rise in my kitchen.  Drafty I guess although it doesn't seem like it is. 
Ready for 1st rising
Deb suggested turning on the oven to preheat for a few mins and then shutting it back off.
After the 1st rising - rolls not Easter!  Ha!
By the time the dough is ready for first rise, oven is just slightly warm and  the perfect place to let bread/rolls rise.

This Thanksgiving we decided to try this basic recipe for rolls fresh from the Nichols Bakery.
After 2nd rising
We ended up with 2 small cookie sheets full of rolls.  Just right for dinner and leftovers.
The baked loaves freeze and thaw really well.  We added just a pinch of extra salt.  Processed food has spoiled our taste buds and we found that we like that extra small pinch for flavor.  Thanks Deb!
