Harvest Dessert aka Pumpkin Pie Dessert

Don't let the name fool you, it's good.  I find that even people that aren't big fans of pumpkin pie LOVE this dessert.  And thus it has been renamed Harvest Dessert.  Origin/credit - My Mom.  Unknown where she got the recipe.


Preheat oven to 350
Crust
1 yellow cake mix
1/2 c butter (softened)
1 egg
Filling
2/3 can evaporated milk
1 can pumpkin (15 oz )
1 t cinnamon
3/4 c sugar
1/2 t salt
1/2 t nutmeg
Topping
1 c reserve cake mix
1/4 c sugar
1 t cinnamon
1/4 c butter softened but not melted

Crust -Empty cake into mixing bowl.  Reserve 1 c out of mix off to the side for the topping.  Add 1/2 c butter and egg into remaining cake mix.  

When thoroughly mixed, press into into bottom of greased 9x13 pan.
Filling - Beat 2 eggs slightly, add evaporated milk and remaining filling ingredients.
When smooth, pour over cake mix crust.
Bake for 25 mins

Topping - Mix remaining 1 c cake mix with softened butter, sugar and cinnamon.   Fork works best for this.

After baking 25 mins, remove from oven and spread on topping.  Bake another 30 to 35 mins.  Dessert should be moist but set....no giggling. 
Sometimes the filling bakes up through the topping and sometimes it doesn't.  No matter - serve warm or room temp.  We like ours with Cool Whip on top. 
We eat any leftover pieces cold for breakfast.  Yeah, sometimes we eat cake for breakfast.  We don't have kids, we can do whatever we want!  Besides, it's not like we eat cake EVERY morning.  
Great for parties, tailgates, potlucks, etc...
