The Great Pressure Cooker Recipe Test of 2012 - French Onion Soup

We had a cold snap of weather move in last night.  It was officially COLD this morning and stayed that way throughout the day so tonight was the perfect time to try this recipe.
We have always liked French Onion Soup.  I have tried various recipes.  However, the prospect of trying a pressure cooker version based on Julia Child's French Onion Soup was very exciting.

The smell while cooking was wonderful.  Tom could smell it the instant he pulled into the garage.
Above is the roux.  Next time I might let this go a touch longer for a deeper color.
This is what it looked like after the pressure cooking.
Tempering the roux.
Ready for toasting under the broiler.  FYI - I used Basic Bread Recipe as the toast.  I didn't put cognac in. I didn't have any and I didn't want to buy a bottle just for 3 T.
I should have let it go a bit longer under the broiler but we just couldn't wait.

"Fantastic!" Tom said.  I couldn't agree more.  This will definitely become our standard French Onion Soup recipe.  Thank you Hip Pressure Cooking and Julia Child.  Bon Appetit!
