The Great Pressure Cooker Recipe Test of 2012 - Missing in Action

I took a break from it all to head out to southwest Kansas to see my parental units last week.  I figured this would also include a break from The Great Pressure Cooker Recipe Test of 2012.  But it turns out it wasn't a complete break.

My mom is a terrific cook.  Low and behold, one evening she busts out her...almost as old as me.... pressure cooker for some quick and yummy Veggie Beef Stew.  Looking on it seemed effortless as she tossed in this and that (including a small handful of wild rice and the same of barley) but the final product was wonderfully flavorful and complex.  We enjoyed leftovers the second night just as much as the first night.

Ingredients 
According to her....whatever you have on hand veggie wise.  Fresh and canned.  Some seasoning and poof...Veggie Beef Stew.
Sorry I can't be more specific.  Just throw caution to the wind, toss in whatever you have and go for it!
