Tom's Scrambled Shrimp


A couple of guys here in the marina invited Tom to go shrimping with them the other night.  They took off around 7pm of for St Simon Island with the parting words "if it's a bust, we will be back soon.  If it's good....who knows when we will be back."

I kept working on my big project (more on that soon.)  I finally called it quits around 10pm and headed back to the boat.  Tom was still out shrimping.  Hum?  Looks like we might be having shrimp for dinner tomorrow night.

Tom finally arrived back home around 11ish with a 2 1/2 gallon bucket in hand - a good sign.  "Want to see the shrimp I caught?"  "Heck yes!"  He opened the bucket and showed me his one, lonely shrimp.  Yes, ONE.  However it was a big one. 

Natually we saved it and cooked it up for breakfast.

It was the perfect topping on open faced scrambled eggs atop toast or Tom's Scrambled Shrimp. 

For the record, Bill said that was the biggest shrimp he'd ever seen caught off the pier at St Simon's.  He only caught one small shrimp and Jessie didn't catch any.  Yay Tom - one is better than none and it was yummy.
