I like garlic and I really like roasted garlic so this seemed like a good place to start on the Great Pressure Cooker Recipe Test of 2012. Conventional method is 1 hour in a 350 oven. Of course this makes the pressure cooker method very appealing because it really cuts down on time.
The Stinking Rose - I followed the recipe exactly....not my normal mode of operation but I thought it was important for testing purposes. Recipe origin - Hip Pressure Cooker
Water in.
Basket in. Garlic in. Pressure cooked 5 mins then cooled naturally.
Transfer to baking pan to be topped with olive oil, salt and pepper and broiled for 5 mins.
Check it out - not much of the original 1 c water is left. I should have measured it to find out exactly how much but I didn't. Oh well.

Tom and I liked this one. It was easy and fast...d-uh! I prefer my roasted garlic really soft and very caramelized so next time I will be adding just a minute or two to pressure cooker time as well as broiler time.
