First item - Yes, I realize it is no longer 2012. I knew when I set out to try all 10 of the top pressure cooker recipes of 2012 over the holidays that it was an ambitious schedule. I suspected I might run a little over into 2013 but that's ok. The point of the whole exercise was to get in the kitchen with my pressure cooker(s) and try them out. I did pretty good as I tried 8 of the 10. I hope to try the two remaining here in the next week.
Second, this is a redo. You might remember that I stretched the boundaries on the recipe previously - attempt No 1 and ended up with roasted and smashed potatoes at the same time. Yummy to taste but not what I was aiming for and quite the mess to look at.
This time I follow the instructions almost exactly. The only variation was that I felt the oil might burn in the pan so I added a pat of butter to balance it out and hopefully keep it from smoking.
Results, Findings, Thoughts, Yum Factor
The dish turned out much better than my first attempt. However, they really don't seem to get as browned as I would like them to. Additionally the rosemary ends up almost burnt as did the garlic. Next time I would add those in midway through the browning or even at the end.
