Loose Meat Salmon Patties
We were just wrapping up a big project - mounting the new solar panel when the sky opened up with rain. Traipsing back and forth in the rain to the top of the dock to grill just didn't seem like a good idea so instead I decided to whip something onboard so we could eat on the boat. It is HOT and humid here so firing up all the burners/oven didn't appeal either. "Oh look, packaged salmon. I think I will make salmon cakes. That is easy, fast and only takes one pan and one burner"' I was 1/2 way into it when I discovered that I really didn't have all the ingredients that I would need - missing was a filler of some sort....crackers, panko/Italian/plain bread crumbs. But I was too far along to turn back now so I just sailed it. I dumped in finely chopped red pepper and 1 spicy japeleno. I added a beaten egg for binding.
Of course then it was too wet . The patties wouldn't hold their shape. So I decided to make one big pattie or frittata (of sorts). It was still too wet to turn in one piece so plan C arrived in the form of tiny sized salmon patties (chunks of mix if you will but tiny sized patties sounds SO much better) that browned up nicely on all sides. Voila Loose Meet Salmon Patties were born. I served it over a nice, big salad of fresh greens.

That looks good, actually. Sometimes ya just gotta go with what you have! We just had salmon salad on a big bed-o-greens today for lunch. I can relate to the "too hot to cook" thing. :)
